BUTTER BEANS (LIMA BEANS) in TOMATO SAUCE
1 lb Butter Beans or Lima Beans
1 can of Peeled Tomatoes or Tomato Puree
4-5 tablespoons of Olive or Vegetable Oil
3 cloves of Garlic or 1 teaspoon of Garlic Powder
2 tablespoons of Tomato Paste
1 tablespoon of Sugar
Salt and Black Pepper to taste
This particular variety of beans comes from the following 3 areas: China, Madagascar and in an area called Florina, in the northern part of Greece.
They are not exactly the flat variety of Lima beans that come from Peru, and the taste is entirely different since they have a buttery taste.
Soak the Beans overnight in a generous amount of water.
(Just a reminder that these Beans expand to almost twice its size, therefore, adequate water is important.)
The next day, drain off the overnight water and rinse Beans thoroughly.
Place Beans in a large pot. Cover with water and bring to a boil for 30 minutes.
Remove from heat and drain excess water.
Place Beans in a rectangular baking tray.
Cut the Onions into slices and saute in a frying pan with Olive Oil until golden brown.
Remove the sauteed Onions from heat and spead over the Beans.
Slice the cloves of Garlic into small cubes or thin slices and spread over the Beans and sauteed Onions.
(Sprinkle over beans if using garlic powder).
Place peeled tomatoes in blender and pulverize for a few seconds.
(If you do not have a blender, use a can of Tomato Puree, Dice or Crushed Tomatoes.)
Pour the Tomatoes over Beans.
Melt Sugar in a little water and pour over all the ingredients.
(The Sugar removes the acidity from the Tomatoes.)
Add Salt and Black Pepper to taste.
Add enough water to cover the Beans, then add the Oil.
Cover with foil and bake at 375 degrees F for 30 - 45 minutes.
Check regularly after the first 30 minutes to ensure that all the liquid has not dried out.
Cook until the Beans are tender.

After a long process involving taste-test after taste-test, experiments and modifications, Goudas Foods has taken everyone's favourite, Butter Beans, perfected them and has brought them to our homes, baked in Tomato Sauce, in a convenient ready-to-eat individual serving size, or as a side dish for the whole family.
Initially, it seemed like an easy task to produce this masterpiece.
However, as the work progressed some of the beans became cracked, soggy or completely mashed.
On another occasion they were over-cooked and the skin fell off.
To balance the taste, flavour, appearance, the combination of spices, as well as the precise texture, was a huge undertaking. Goudas Foods finally hit the jackpot and went through with the production.
The first shipment has arrived in Canada.
As always when a new product arrives, the employees become "guinea pigs".
There were only positive responses to this product.
Everyone loved it a whole case was eaten within a short time.
