There are three methods of preparing a Marinated Bean Salad.

Method 1: You go to the corner store or supermarket and purchase each of the following:
1 lb. Red Kidney Beans, 1 lb. Chick Peas, 1 lb. Romano Beans, 1 large Onion, Vinegar, Vegetable Oil, 1 Lemon, 3 or 4 cloves of Garlic, Salt, Black Pepper.

Soak the beans overnight in individual containers.
The next day, thoroughly rinse the beans and remove any stones or foreign objects.

Fill 3 pots with water, one for the Kidney Beans, another for the Chick Peas and the other for the Romano Beans.
Bring each to a boil, reduce heat level and continue boiling until the beans are tender to your taste.
(Each bean species is boiled separately so that you do not end up with a multi-colored bean combo.
The choice is yours).
Drain excess water. Transfer your cooked beans/peas to a large glass bowl.

Chop the onion and garlic into thin slices and add to the bean/peas mixture.
Squeeze the juice of the lemon over the mixture.
Add 1/4 cup of vegetable oil, 2 tablespoons of vinegar, salt and black pepper to taste.
Gently stir the mixture to combine all the ingredients.
Let stand for 1 or 2 hours for all the flavours to penetrate the ingredients.
(You may refrigerate this salad once it is cooked, and serve cold, if you so choose).

Method 2: You may purchase 1 can of Kidney Beans, 1 Can of Romano Beans, and 1 Can of Chick Peas (if you are in Canada the following brands are recommended: Montini, Unico, Mr. Goudas, Aurora and Sardo). Include all the other ingredients mentioned under Method 1.

Open cans of beans/peas, drain off excess water and pour into large glass bowl.
Continue on with the recipe from Chop the onions in Method One.

Method 3: Purchase a can of Mr. Goudas ready-to-eat Marinated Bean Salad.

Open and pour the contents, liquid included, into a medium sized glass bowl.
Savor the tantalizing odor. Feast your eyes on the contents: perfect in every aspect.

Each bean is totally recognizable: beautiful, perfect, and in its natural state as each should be (there is no run-on colour, e.g. no red chick peas...).

It is the year 2013 and as we review the recipe, someone mentioned that the Montini brand is not available any where, any more and maybe it should be deleted.

When permission from Mr. Goudas was requested for deletion, he mentioned that the story of Mr. Montini is significant since Mr. Goudas has written several articles about Mr. Montini, including -The Toughest Man on Earth.
