This simple Quick Corn Bread Recipe is so easy even a beginner becomes a baker.
Once you have experimented with this recipe a few times, you will gain confidence and you may find yourself very proud of the results.
After all, Corn Bread is seldom seen in bakeries anymore.
1 cup All Purpose Flour
1 cup Yellow Cornmeal
3 tablespoons 100% Pure Cane Sugar
1 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1 cup Evaporated Milk
1/4 cup Sunflower or Soya Oil (Olive Oil is too heavy for this)
1 large egg or 2 large egg whites, lightly beaten
Preheat oven to 400 degrees.
Spray a 9-inch square baking pan with non-stick cooking spray.
Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl and set aside.
In a separate smaller bowl, whisk liquid items (milk, oil and egg or egg whites).
Pour the wet ingredients over the dry and, using a fork, stir until just combined.
Pour batter evenly into pan and bake 25 to 30 minutes.
To ensure that your creation is cooked, insert a toothpick into the center, should it come out clean, then, remove from oven.
Cut into squares or triangles and serve.
You may serve hot with butter, or your favourite jam or marmalade.
