There are thousands of ways to prepare Barley soup.

It may be plain, with beef, pork, chicken vegetables and so on...

Today, I will share a simple recipe that is especially comforting on a rainy, spring day or perhaps during the cold winter months.

You will need:

2 tablespoons Mr Goudas Extra Virgin Olive Oil
1 cup Mr Wu chicken Broth (or 1 cup water and 1 chicken bouillon cube)
1 cup beef broth (or 1 cups water and 1 beef bouillon cubes)
2 cups water
1 carrot, diced

***You may also wish to add 1 small potato, peeled and diced. Some people use other starches such as yam.
While others add baby dumplings... More starch makes for a thicker, richer soup.***

1/4 cup Mr Goudas Pearl Barley
1 tablespoon Mr Goudas tomato paste
1 cup cabbage, shredded (optional)
Mr Goudas salt (optional)
Mr. Goudas black pepper (optional)
green onion chopped
1/2 yellow onion, finely chopped
1/2 green pepper (or red and yellow if you prefer)
1 garlic clove, minced ( you may use more or less-some people love the taste of garlic)
1/4 teaspoon Mr Goudas allspice
2 sprigs fresh thyme
Mr. Goudas Trinidad Style Hot sauce


***It is important to note that you can use what ever vegetables you prefer just be careful not to overcook them.*** 


Let's Get this show on the road:

Thoroughly wash hands and gather your ingredients.

Wash the potato to remove all dirt residue. 
Peel potato and cut in quarters and then cubes. Set aside in lightly salted, water until ready to place in soup.

Chop green onions.

Wash and prepare onions, carrots, and shredded cabbage (and /or other vegetables of your choice)













After washing the green pepper cut in half, remove seeds and centre. 













Slice green peppers then cut finely.













Once you've prepared all your vegetables, we can move on to the cooking process. 

Place a pot with 2 cups water on Medium heat; bring to a Boil.














Add Mr. Goudas Salt followed by 2 tablespoons extra virgin olive oil.













Reduce flame and add your chicken and beef broth.


Add tomato paste, stir gently allow it to dissolve.

You may then add the potato and Vegetables followed by Mr. Goudas  All spice and Black pepper-  if you desire.













Cover and allow to simmer for two minutes .

Now as you may already know- There are many brands of barley available on the market but in my opinion none quite compares to Mr Goudas Pearl Barley...

Remove lid and add your premeasured barley. Stir ingredients, cover pot and allow to cook on medium heat for 20 minutes.

Your soup should now be ready.

Serve warm and enjoy!!
